We love homemade ice cream at our house! I found a recipe for a non-dairy version on the internet and made a few changes. The recipe makes about 6 small servings or 4 generous ones. It’s quick and easy…only 5 ingredients… and has become one of our favorite comfort foods.
We make it in a small ice cream maker attachment for our Kitchen-Aid mixer. But you could use any of the small ice cream makers…even the ice cream balls…that you see on the market today.
“No moo” Chocolate Ice Cream
1 small pkg Mori-Nu firm silken tofu
1 1/2 cup Chocolate Silk Soy Milk
1/3 cup sugar
2 teaspoons vanilla extract
1/4 cup chocolate chips
Put everything in a blender and blend until the chocolate chips are chopped up very small. Pour into ice cream maker. Churn 15-20 minutes. Dish up and enjoy!!
Now, if the thought of tofu in ice cream sounds too scary for words…don’t be afraid!! As Eleanor Roosevelt said, “You must do the thing you think you cannot do!” Maybe she was talking about putting tofu in your ice cream! This doesn’t taste strange at all…it actually tastes a lot like a Fudgesicle. So, be brave…leave out the “moo” and try it. And remember, it’s low-fat and guilt-free!
